February Food: Pork Chops with Seasonal Vegetables

Chow down on the delicious vegetables that February has produced. Squash and sprouts are still in abundance, as are apples and oranges – delicious in baked desserts.

Seasonal vegetables from Colorado in February include potatoes, apples and onions which inspired this month’s simple meal. Spinach, arugula, lettuce, and radishes are also in season from states neighboring Colorado. 


Simple Slow Cooker Pork Chops with Seasonal Vegetables

Prep time: 5 minutes

Cook time: 5 hours


  • 3 pork chops, cut about 1-inch thick
  • 3 red delicious apples, diced
  • 3 scrubbed russet potatoes, diced
  • 1 small yellow onion, diced
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • ¼ teaspoon thyme
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 3 tablespoons brown sugar

Combine vinegar, water, thyme, salt, pepper, cinnamon, and brown sugar. Set aside.
Add onions, potatoes and apples to slow cooker. Add pork chops. Top with sauce.
Cover and cook on high for 4 hours.
Serve immediately, with additional sauce/drippings from bottom of the slow cooker.
